The chef and owner Franco Giolitto, who graduated in 1971, began his career around Italy in well-known restaurants.

After spending two years in London in the star restaurant "Bresson", Chef Franco back in the Langhe where he worked for two years at the restaurant in the castle of Santa Vittoria d'Alba.

Fell in love with this country area, in July 14, 1984, comes to Verduno where he started on what today is one of his reasons of life: the Falstaff Restaurant (takes its name from a Shakespearean character revived Verdi's opera).
Our Chef Franco is later assisted by Maurizio Sirianni, expert sommelier and maître.

In July 2014 Chef Franco Giolitto, surrounded by his family and friends winemakers, restaurateurs, loyal guests, has celebrated 30 years of activity.

Thirty years of passion for cooking, foods made exclusively with selected food-stuffs.
